Chorizo Skillet!




2 oz of chorizo and just break it up (No added oil) and pan fry (the chorizo is fatty on its own and doesn’t need oil). Cook until the meat is half done. 
Add
1 tablespoon chopped onion
1 tablespoon chopped green pepper
2 grape tomatoes chopped up
Cook all until soft
Add
1/2 tablespoon of tomato paste
1/8 cup of beef broth
Let simmer a minute or two and add two eggs. Cover and let eggs cook in the sauce. Serve at your preferred cooked level.
