Greek Style Sweet Potato Fries

Greek style sweet potato fries with homemade roasted red pepper sauce! Oh my YUM! Pair these  with literally anything. You may even eat them all alone, and that’s fine because they are that good.⁣
For the sweet potato fries:⁣
3 sweet potatoes cut into thin slices⁣
2 tbsp olive oil⁣
1 tbsp oregano⁣
Fresh parsley finely chopped (handful)⁣
Bunch of scallions finely chopped ⁣
Zest of 1 lemon⁣
1 tsp paprika ⁣
Salt & pepper to your liking⁣
Start by baking the sweet potatoes or put them in an air fryer. ( I prefer air fryer, they come out crispy)⁣
Bake at 450 for 20 minutes ⁣
Air fry at 400 for 10-12 minutes ⁣
In the meantime..⁣
In a bowl, whisk together olive oil, oregano, parsley, lemon zest, paprika, salt & pepper. ⁣
Once sweet potato fries are done toss in bowl with olive oil mixture. ⁣
Garnish with scallions & serve immediately!⁣
